Spaghetti Squash, also known as Gold String Melon, is a truly unique winter squash. When cooked, its pale yellow flesh transforms into tender, noodle-like strands with a mild, savoury flavour and a satisfying al dente texture. Perfect as a low-calorie alternative to pasta — simply season with butter and salt, or top with your favourite sauce.
Each plant produces 5 to 7 fruits, with oval squash growing up to 25cm long (approx. 1.8kg each). The smooth, hard-skinned fruits store well and can keep for up to 4 months, making them a great addition to your winter pantry.
Sowing & Growing Guide
Climate:
Temperate zones: Sow in early spring and summer.
Subtropical zones: Can be sown year-round if frost-free.
Planting:
Sow seeds 20mm deep, spaced 1 metre apart.
Provide a trellis or ample space for vines to sprawl.
Ideal soil temperature for germination: 21–35°C.
Germination: 7–10 days.
Care:
Once fruits ripen on the vine, wipe gently with a diluted bleach solution to prevent rot and extend storage life.
Ensure the skin is intact for best keeping quality.
Harvesting
Ready in approximately 15 weeks, when fruits reach 22–25cm in length and develop a firm, golden rind.
Cut fruit from the vine carefully and store in a cool, dry place.
