Mustard Gai Choi (Brassica juncea)
Also known as Chinese mustard, Swatow mustard greens, mustard cabbage, or Indian mustard, Brassica juncea (Gai Choi) is a rapidly maturing leafy green characterized by its distinctive curled head. This versatile vegetable is well-suited for various culinary applications, including baby leaf production, stir-fries, and salads. Its cold hardiness makes it an excellent choice for cool-season home gardens.
As a member of the diverse mustard family, B. juncea is believed to have originated in the Central Himalayas and is now cultivated extensively throughout Asia. While historically significant for seed production (utilized as a spice and for oil extraction), contemporary cultivation often emphasizes the flavorful leaves, as in the case of Gai Choi.
Brassica juncea exhibits considerable phenotypic plasticity. Leaf morphology ranges from smooth to heavily crinkled, venation varies in prominence, and leaf color spans from vibrant to deep green. A purple-leafed cultivar is also available, offering ornamental value in home gardens.
Gai Choi flourishes in warm, humid environments, exhibiting vigorous growth under optimal conditions.
