Sweet Corn – Jolly Roger Seeds (Zea mays)
Not to WA, TAS & NT
Jolly Roger is a robust Australian heirloom sweet corn, well-suited to local growing conditions. This non-hybrid, non-GMO variety produces 2–3 large, tightly packed cobs per plant, bursting with juicy kernels and a deliciously sweet flavour. Unlike supermarket hybrid corn, Jolly Roger offers a more complex, traditional corn taste. A top pick for gardeners seeking flavour, productivity, and reliable performance.
How to Grow
- When to Sow: Spring to early summer, once frost risk has passed. Successive sowings can extend the harvest season into January in most Australian regions.
- Soil & Position: Full sun in fertile, well-drained soil enriched with compost or well-rotted manure.
- Sowing Depth: 20–30mm deep.
- Spacing: 30cm between plants; 75cm between rows.
- Growth Habit: Frost-tender annual, grows up to 2m tall.
- Maturity: Ready to harvest in approximately 85–90 days.
- Pollination Tip: Plant in blocks rather than single rows to improve pollination and ensure full, well-formed cobs.
Harvesting & Use
Watch for silks to appear—then count 18 days and check the kernels. When the juice is clear, it’s not ready; when it turns milky, it’s time to harvest. Pick and cook promptly for the best sweetness and texture. Best enjoyed fresh as the heirloom sweetness fades quicker than commercial supersweet hybrids.
