Description

Chives (Allium schoenoprasum) are a hardy perennial herb that grows in slowly spreading clumps, reaching up to 25 centimetres in height. The plant features slender, hollow, tubular green leaves with a mild onion flavour, making it a versatile addition to a wide range of dishes including salads, soups, stews, dips, sauces, and casseroles. Chives are easy to grow and suitable for both garden beds and containers, thriving in most Australian climates. Their attractive foliage also makes them an appealing garnish. While often confused with garlic chives (Allium tuberosum), chives have a distinctly milder taste and are grown in the same way.

Growing Instructions

When to Sow
Chive seeds can be sown year-round in most regions, although extremely hot or cold conditions may affect germination and plant growth. Refer to your local climate guide for the best seasonal sowing periods.

Preparation
Chives prefer a sunny location with at least six hours of direct sunlight each day. Prepare the planting area by removing weeds, loosening the soil, and enriching it with aged compost or animal manure. The soil should be well-drained and high in organic matter. For container growing, use a high-quality potting mix and choose a container with a minimum volume of 10 litres. Container-grown chives may need more frequent feeding and watering.

How to Sow
Chive seeds do not require soaking or stratification before sowing. For best results, sow directly into garden beds at a depth of 5 millimetres, spacing seeds and rows 15 centimetres apart. Keep the soil consistently moist but not waterlogged. Germination typically occurs within 7 to 14 days at soil temperatures between 18 and 21 degrees Celsius. Alternatively, use the scatter method by roughening the soil, scattering the seeds evenly, and gently smoothing the soil over the top. Because the seeds are small and light, they can be mixed with sand or fine soil for even distribution. Gently press the seeds into the soil surface to ensure good contact. Protect seedlings from pests and harsh weather as they establish.

How to Grow On
Chives require regular watering during the growing season. Water deeply when the soil is dry about 5 centimetres below the surface, preferably in the early morning or late afternoon. Avoid overhead watering to reduce the risk of fungal disease. If your soil is rich and well-prepared, additional fertiliser is usually unnecessary. In poorer soils or to boost growth, apply a high-nitrogen or herb-specific fertiliser. Use slow-release fertiliser when seedlings reach 5 to 10 centimetres tall, and supplement with liquid feed throughout the growing season if needed. Thin seedlings to around 15 centimetres apart once they are strong enough to handle. To encourage leaf production and extend the plant’s life, remove flower stalks as soon as they appear.

How to Harvest
Chives are typically ready to harvest in 60 to 90 days. Begin harvesting once the leaves are long enough to use, cutting the outer leaves at the base while allowing the centre to continue growing. Regular harvesting encourages new growth. For short-term storage, freshly cut chives can be wrapped in a damp paper towel and stored in a perforated plastic bag in the refrigerator.
