The Red Garnet variety of Amaranth is primarily cultivated as a leaf vegetable, ideal for baby leaf, sprouts, and microgreens. The plants produce large, burgundy red to slightly green leaves with a tender texture and excellent flavor. This variety is particularly popular in Asian cuisine, where it is used in soups, stews, salads, and stir-fries. Known for its fast growth and high nutritional value, Red Garnet Amaranth is heat-tolerant and thrives in hot weather. Young leaves are tender and perfect for salads, while mature leaves are best cooked, similar to spinach.
Additionally, this plant can be grown as an ornamental, with upright growth reaching up to 200cm. It features attractive burgundy red and green leaves and produces striking red flowers, making it suitable for beds, borders, mass planting, and cottage gardens. Seeds from mature plants can also be harvested and used as a grain.
